Good New!!


Let me start of by saying Friday was one of the best days I have had in a really long time it truly was a perfect day !
That being said in my last post I hinted that dale called me with really good new the good news was that he was offered the Or manger potion at the surgery clinic we were really shocked and surprised. Dale had no clue the position was open and 2nd he had only been working there for 5 months.
Evidently his boss resigned on Friday and Dales name was the only one that came up to fill her place.
The 3 big bosses sat down looked over his resume and saw that he was more than qualified . 
Dale had been a or manger in the Air force for years and he has his degree in management.
On Friday he singed the contract and next week he will start as the OR manger.
I am so happy for him and excited at what future opportunity will bring. 
Now he will have less hours at work and more time to spend with our family.The only down fall is that there will be a few upset DR. that will only want him as a surgery tech.

Happy!!

I was dancing my butt off when I heard my cell ring the tone indicating that it was Dale calling me. 
As I was gasping for air I said hello and Dale gave me some really good new.
After I got off the phone I got on my knees and thanked Heavenly Father for all our blessings.
I could not help to reflect on how things were last year at this time.
Everything felt uncertain and we had no clear plan of what our future would be.
Dale was getting ready to retire from the Air force and we had no Job our house was not selling all we new for sure was that we were going to move to Colorado springs.
I was having a lot of panic attacks I spent many hours on my knees praying asking Heavenly father for the things our family needed.
So with blind faith jobless and our house rented out we moved to Colorado.
It was no easy trip and it took months to get a job but we were together and we were happy.
We became closer and our faith became stronger as we fasted and prayed for the blessings we were in need of.
Dale got a job with an amazing company it was not the job he wanted  and has a degree in  but we were grateful that Dale had the skills this job required to fall back on. 
Dale works with amazing Dr. and nurses and surgery tecs. the atmosphere is positive and they value Dales experiences and Knowledge.

We have renters in our Alaska home and thanks to low interest rates we are able to refinance and are now making a little money on the rental now.

We our building an amazing house in an equialy amazing neighborhood.

Our Children our healthy and happy and in a few weeks I will be a grandmother for the first time.

My life could not be any happier right now.
I am so great full for a loving Heavenly Father who hears and answers prayers.

Sandy's sinful buttermilk syrup



In February I went to a Chocolate tasting party at my  friend Sandy's house.
She had all these yummy to die for treats she had made.
She taught us how to make some of her chocolate mater pieces. 
Just because it is so yummy she made some of her buttermilk syrup to put on here cheese cake.
I fell in love with this stuff.
It was so yummy and sweat and sinful.
I made it this weekend and was just as pleased with how it tasted the first time I tried it.
We ate it on french toast the flavors were divine. 
My mouth was seriously doing the happy dance.



So are you dying to know how to make it yet?
So here is what you need. 

3/4 c. buttermilk
1 1/2 c. sugar
1 stick real butter
2 Tbsp. corn syrup
1 tsp. baking soda
1 tsp. vanilla

Combine buttermilk, sugar, butter, corn syrup, and baking soda in a LARGE pot. Like one you’d make soup in. Yes, you’ll have way more pot than ingredients (and I’m not referring to the green leafy stuff), but this will boil all over your newly-cleaned stove if you put it in a smaller saucepan. 



Bring ingredients to a boil and reduce heat to low (as long as it’s still bubbling, you’re okay). Cook, stirring very frequently, for 8-9 minutes. You’re basically making candy here and candy-making requires constant vigilance.
When it’s done, it should take on this luscious golden-brown color. Remove from heat and add vanilla.
There might be a white foam on top you can scrape it off or stir it in makes no differences

Now use it on any thing you like and don't blame me when you end up eating spoonfuls right out of the jar.

House update


Things are moving along quickly with our house.
Last Monday we had our pre -drywall inspection to make sure every thing was were it belonged.

We had to wear these lovely hard hats and go through each room of the house making sure every light switch plug etc.was in the right place .
As we were walking through the house the workers were hard at work putting up the siding.

You can see where they started on the side.
They finished the back side while we were there.
Speaking of back side all the workers were taking a break out front and when I left the house to get my phone out of the truck they were all checking out my backside.
I was a little annoyed but what was I to do.
I told Dale when I got back in the house and a short while later we left the house together and as we were walking by the workers again Dale made a big point to slap my BUM.
I could have just killed him but he thought it was funny.


Now all the siding is up!


It looks great and we are loving it!


The dry wall is up and this week they start painting and putting trim up I think.

We got an email yesterday telling us our move in date. 
We were a little surprised that it was May 1st 3 weeks earlier than we thought.
I really cant believe how fast this has happened.
It will be less than 3 months from the time they dug the hole in the ground until we move in.
It took us that long to pick every thing out.

Robbie was studying Greek tragedies and one of his assignments was to make a Greek style mask.
Every freshman had the same assignment so when we went to buy a mask at the craft store they were all gone.
So we decided to make one out plaster.
He chose Aniken Skywalker form the list of charter on the approved list.
His idea was to make  Aniken on one side and Darthvater on the other.

  

It was suppose to be abstract and he needed to use symbols that applied to the charter's story. 
I think his mask turned out amazingly well.

He was very proud of it and I think it is super cool.
He plans on hanging it on his wall in his new room along with his other star wars stuff.



Yummy Granola

The other day I decided to make granola for the first time.
I was surprised at just how easy it was to make.
I used a basic recipe and added all the good stuff I wanted.



So here is the recipe.
{ Tip you might want to make 2 or three batches at a time it will go fast I promise}


1/2 cup margarine (1 stick)
1 cup raw brown sugar
1/4 cup water
1/4 teaspoon salt
4 cups rolled oats
1/2 teaspoon cinnamon
1/2 cup each What ever seeds, nuts and dried fruit you may want. ( I used almonds ,sunflower, seeds flax, pecans, and dried cranberries.) 
In a large 4 quart saucepan melt the margarine, sugar and water together. Stir it well and let it simmer for a few minutes (2 or 3 minutes should be enough). Add the salt, oatmeal and cinnamon to the big pot. Remove the pot from the stove and stir up the granola. You want to coat the oats with the brown sugar and margarine, so keep stirring until everything is moistened. Put the granola onto a cookie sheet, the kind with sides. Bake it at 375° for 10 minutes. It should be a nice golden brown. Remove the pan from the oven and allow the granola to cool right there in the pan. When it is cool, break it up into small pieces and transfer it to canister {or what ever air tight container you want to use.} Add the nuts and/or dried fruit when you put it into the canister. I love it with my Greek yogurt and with milk. I also love it just plain as a snack.

Gooey nummy naughtiness!!

This is the best cake ever it is to die for Yummy!
The first time I had this it was store bought my mother in law bought it I about died when I took my first bite.
I looked at the container it came in it was a Paula dean gooey butter cake.
I quickly looked up the recipe went and got what I needed to make it and have been making it ever since.
Everyone who has ever had it loves it and asks for the recipe.

Ingredients 

Cake:
1 18 1/4-ounce package yellow cake mix
1 egg
8 tablespoons butter, melted
Filling:
1 8-ounce package cream cheese, softened
2 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 16-ounce box powdered sugar

Directions

Preheat oven to 350 degrees F.
Combine the cake mix, egg, and butter and mix well with an electric mixer.  Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.
In a large bowl, beat the cream cheese until smooth.  Add the eggs, vanilla, and butter and beat together. 
Next, add the powdered sugar and mix well.  Spread over cake batter and bake for 40 to 50 minutes.  Make sure not to over bake as the center should be a little gooey.

I cant believe how much has been done this week on the house.

Its really looking like a house I cant believe this is going to be our new home.
